Spicy Squash Soup
Ingredients:
- 2 tbsp butter
- 1 small onion, chopped
- 1 large clove of garlic, chopped
- 1/2 to 1 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- pinch cayenne pepper
- 4 cups peeled, diced winter squash
- 3 1/2 cups chicken stock
- 1/2 teaspoon granulated sugar
- Salt and freshly ground pepper
Steps:
- Melt butter in a heavy saucepan. Add onion, garlic, coriander, cumin, cayenne and squash. Cook 1 to 2 minutes, then add stock, sugar, salt and pepper.
- Bring to boil, reduce heat, cover and simmer until squash is very tender, about 20 minutes. Cool then puree in batches.
- Return to saucepan, thin with additional stock, if required, and heat through.
- Taste and adjust seasoning. Spoon into heated bowls. Garnish with plain yoghurt and serve. Makes 4 1/2 cups
